Gluten Free Banana Chocolate Chip Muffins

Banana Choco Muffins are delicious and moist muffins made with ripe bananas and chocolate chips. They are easy to make and perfect for a quick breakfast or snack. These muffins are also a great way to use up overripe bananas and satisfy your sweet tooth without feeling guilty. The combination of banana and chocolate creates a delectable flavor that’s sure to please everyone.

INGREDIENTS:

  • 2 large ripe bananas
  • 120g plain flour
  •  120g almond meal
  • 2 eggs
  • 100g @chobaniau
  • Greek yoghurt
  • 40ml maple syrup
  • 1 tsp of baking soda
  • 125 ml of soy milk
  • pinch of salt
  • 100g of dark choc
  • chips

METHOD:

  1. Preheat oven to 180c. Mash bananas, add yoghurt, eggs, soy milk and maple syrup.
  2. In a seperate bowl add flour, almond meal, salt, baking soda and chocolate chips and mix.
  3. Add wet and dry ingredients and mix. Place batter into 12 lined muffin tins.
  4. Bake for 20-25 mins. Leave to cool for 20-30 mins.
