Poached Eggs on Greens & Tomatoes


▪  1 tsp. apple cider vinegar
▪  1 tomato, sliced
▪  2 eggs
▪  2 cup spinach
▪  1 tsp. olive oil


1. Slice tomato.
2. Fill a small pot about halfway with warm water and add vinegar, over medium-high heat.
3. In a small skillet, over medium heat, add the olive oil, tomato spinach and sauté for 3 minutes stirring frequently.

1. When the water comes to a high simmer, crack the eggs into the pot and cook for about 3 minutes or until the whites are firm.
2. Remove with a slotted spoon and place over the tomato and spinach mixture.

Serve with fresh seasonal fruit
