Irresistible Low FODMAP Spicy Vodka Pasta

Ingredients
- ¼ cup olive oil
- 1 small clove of garlic, diced
- 1/2 brown onion
- 1/2 cup tomato paste
- 1 cup light cooking cream
- 2 tablespoon vodka
- 2 teaspoon red pepper flakes
- 450 grams of shells protein or wholemeal pasta
- 1 can of canned butter beans (rinsed)
- 1 chopped bunch of broccolini
- 2 tablespoon butter
- 1/2 cup parmesan cheese
- Basil, chopped, to serve
- Salt and pepper to taste
Directions
- In a large saucepan, heat the olive oil, garlic and onion. Cook until soft. Add chopped broccolini, add tomato paste, and cook until it appears darker in colour / caramelised.
- Add in the cooking cream, then add in the vodka and cook through until evaporated.
- Add in the red pepper flakes.
- Continue to stir until combined—season with salt and pepper. Remove the sauce from the heat.
- Cook pasta separately according to the packet. When the pasta is done, save ¼ of the pasta water before draining.
- Place the pan with the pasta sauce over medium heat, add butter, and stir until melted.
- Add pasta, butter beans, and pasta water to the sauce. Add parmesan cheese and stir. Add more salt and pepper to taste.
- Top with a sprinkling of parmesan cheese and basil to serve.
