Sheet Pan Lemon Garlic Salmon with Broccolini

Ingredients

▪  3 (6 oz.) salmon fillets
▪  2 tbsp. olive oil
▪  1/4 tsp. salt
▪  1/8 tsp. pepper
▪  1 Bunch broccolini
▪  1 cup cherry tomatoes
▪  2 cloves garlic, minced
▪  1 tbsp. maple syrup
▪  1 lemon
▪  1 tsp. basil, dried

 

Instructions

PREP
1. Preheat oven to 400ºF.

MAKE
1. Place salmon on sheet pan and drizzle with 1 tbsp of olive oil and salt and pepper.
2. Place vegetables in a bowl and toss well with 1 tbsp oil, 2 tbsp minced garlic and more salt and pepper. Put veggies on sheet pan around the salmon.
3. Roast for about 15-19 minutes or until salmon flakes.
4. In another small bowl add 2 tbsp lemon juice, 2 tsp lemon zest and 1 tbsp. honey. Whisk well.
5. Pour over salmon and veggies after removing from oven and serve immediately. Add more salt and pepper to taste.
