Easy Vegan Sweet Potato Curry
Easy Vegan Sweet Potato Curry is a delicious and healthy dish with sweet potatoes and various spices. INGREDIENTS
- Drizzle of olive oil
- 1 Brown Onion (roughly chopped)
- 3-4 Cloves of Garlic (chopped)
- 1 tsp Ginger (minced)
- 2 Tbsp Red Curry Paste (Jar or Homemade – depends on your vibe!)
- 1 tbs Chilli Flakes
- 1 tsp Paprika
- 1 tsp of Cumin
- 1 tsp Turmeric
- 1.2kg Large Sweet Potatoes
- 1x 425g Can Lentils (washed)
- 1x 425g Can Diced Tomatoes
- 1/2 cup Vegetable Stock (1x cube)
- 400ml Can light Coconut Milk
- 1/4 cup of Natural Peanut Butter
- 1x Large Bag of Spinach
- 2 cups (40g) Fresh Basil
- 2 Tbsp Palm sugar (or brown sugar)
- Sea Salt and Black Pepper
METHOD
- Add the olive oil to a large pot along with the chopped onion, garlic, ginger and red curry paste, chilli, paprika and turmeric and cook until the onions are softened.
- Add the sweet potatoes and lentils
- Add in the diced tomatoes, vegetable stock and coconut milk. Bring mixture to the boil and allow to simmer for 10-12 minutes or until the sweet potato is mashable
- Add & stir in the peanut butter
- Add in the spinach segmentally until wilted down
- Add the palm sugar (or brown sugar) this step is optional but it really brings the flavours together
- Serve with your choice of rice & garlic Naan
